What a pleasure it is to visit equipment suppliers in the daily world of the baking industry. These occasions are rare opportunities to “take the time” to explore equipment in showrooms or during assembly. They allow us to delve into technical details that are often skimmed over due to time constraints during commercial meetings with clients. Such visits are also convivial moments to learn about the history of our hosts, their values, and their business strategies.
I’m delighted to dedicate this article to Philippe PELLÉ and the equipment of the REVENT brand for many reasons. First, REVENT is a “reference” brand in our industry, so it makes sense to dedicate an article on this blog. Moreover, I enjoy highlighting French companies that are human-scale and entirely dedicated to the baking industry. Philippe PELLÉ has led the company since 2008 when he purchased and renamed it after himself. Based in Avranches, Normandy, France, the company offers a wide range of equipment covering most of the baking process—from mixers and dough kneaders to industrial tunnel ovens. However, the company is best known for importing and distributing REVENT equipment, particularly the Rotosole® ovens discussed later in this article.

PELLÉ ÉQUIPEMENTS also developed the patented Rotosole® technology. This innovative approach combines “deck baking” with a traditional rotating rack oven.
The baking rack integrates into a specially designed secondary rack to replicate a stone oven baking style. Once positioned, this support rack rises to align with flexible mesh trays, making direct contact with the products to recreate a flat deck-baking surface. Ingenious!

This system leverages a simple physical principle: the lower the atmospheric pressure, the lower the boiling point of water. By creating low pressure, the system accelerates the evaporation of hot moisture in baked goods, enabling faster cooling.
Capacity from 40kg to 200kg of product.
Like rotating ovens, the RISV system is available in various configurations, including single or dual racks and options for small or large capacities.
