What a satisfaction it is to travel to meet the equipment manufacturers who are part of our daily lives in the Bakery, Viennoiserie, and Pastry sector. Each time, it is a rare opportunity to “take the time” to discover the equipment in showrooms or during installation. It’s a chance to focus on technical details that are often discussed too quickly – due to lack of time! – during commercial meetings with our clients. These visits are also convivial moments where we can linger on the history of our hosts, their values, and their commercial strategies.

It is a pleasure today to focus on  PROCYS company for many reasons. PROCYS is a French company with a strong technical expertise. It remains human-sized, is largely oriented towards the baking industry business, and provides tailor-made solutions : PROCYS therefore ticks all the boxes of the companies we love to promote, so this article was an obvious choice!

PROCYS is a company specialized in the manufacturing of equipment and machinery for professionals in the baking industry, large and medium-sized retailers, and more broadly, the food market. PROCYS also positions itself as a supplier of special machines, offering tailor-made solutions to meet the specific needs of its clients.

Hervé PENISSON has been leading the company since 2021. PROCYS offers a range of industrial machines covering the fields of biscuit making, pastry, viennoiserie, and chocolate production. Their machines operate from the end of the production process (oven, fryer, moulder) to the entry into packaging machines.

The company has strong expertise in macarons, with automation solutions for the various stages of production.

Products conveying and Flow management

High-speed product flow management is PROCYS’s core business. The company offers solutions for product conveying, ranging from accumulators and buffers to mergers, divergers, and depanners.

PROCYS expertise

Depositing involves dosing a product (cream for example) before baking. It can be done on a baking tray/plate or an oven belt.

The dosing involves dispensing a substance (cream, filling, etc.) on a product (such as a pie base or a biscuit).

Capping involves topping a product (macaron, biscuit) with another biscuit, like a hat. PROCYS positions itself as a specialist in macarons through the development of a complete process dedicated to this flagship product of French pastry.

Injection / filling involves incorporating a filling (cream, jam, syrop) inside a product (cake, bread, croissant, etc.).

Thanks to these innovations, the client benefits from a solution that covers the entire manufacturing process, from depositing to capping, whether at high speed (industrial dimensions) or low speed (artisanal dimensions).

Proof that innovation is part of PROCYS’s DNA, the company has developed a printing process based on inkjet technology, allowing the customization of its clients’ products with a resolution of 400 dpi. The printing speed can reach up to 30 m/min, and it is also very easy to use.
